Owner of My Cake Delights, John Quai Hoi has been decorating for over 25 years and has taught/demonstrated around Australia and internationally. From novelty work to figure modelling; sugar flowers and intricate pipework.; chocolate, buttercream and even blown sugar work; traditional cakes or modern – there isn’t anything he can’t do!
A few weeks ago, Mary Reid from Merivale Cakes and Crafts organised a quick trip to Melbourne for a small bunch of Brisbane/Toowoomba cake decorators to work with John. We started with a variety of fauna, learning new techniques of blending and colouring before moving on to the orchids to finish the arrangement. Arranging the flora is another skill in itself! Gives me a new appreciation for florists!
We then spent an afternoon learning John’s unique technique for extension work using stamens. There was not a lot of chit chat going on as we were all concentrating very hard on the intricate task at hand.
John has just published his first book, My Sugarcraft Delights, of which I have a signed copy!
